The main ingredient of Aceto Balsamico Tradizionale di Modena is time: still today, Traditional Balsamic Vinegar from Modena is aged slowly, from 12 to 25 years, and during this time it passes from cask to cask, absorbing the aromas of the ancient wooden barrels.

Bonne Maman was set up in 1974 and began with production of high quality traditional preserves in Normandy, near famous Mont St. Michel. The preserves were sold in beautifully shaped jars with a vichy type cap and handmarked label. Traditional, strictly confidential processing technology allowed the company to grow beyond the most daring expectations, which resulted in achievement of a firm position among leading French producers and exporters.

Their Wisconsin based company consists of five state-of-the-art manufacturing facilities located in the areas surrounding Denmark and Pulaski, Wisconsin. Each plant specializes in a specific cheese that is produced there daily by the same cheese makers. All Belgioioso cheeses are crafted using only the freshest Wisconsin cow's milk. The cheeses are manufactured, aged, finished, packaged and shipped solely from our facilities, giving Belgioioso full quality control of the products from start to finish.
